Vegetarian Chili

Modified veggie chili recipe from “The Complete Vegetarian Cuisine”.

Ingredients

  • 1 tbsp olive oil
  • 1 onion peeled and chopped
  • 1 red pepper deseeded and chopped
  • 2 garlic cloves crushed
  • 1 26 oz can tomatoes
  • 2 15 oz cans Kidney beans
  • 1 15 oz can black beans
  • 12 cup frozen corn kernels
  • 1 bunch dark greens (kale) optional
  • 1 tsp mild paprika
  • 1 tbsp Chili Powder
  • 2 tsp cumin
  • 2 tsp basil
  • 1 cinnamon stick
  • salt and pepper to taste

Directions

  1. Heat oil in large saucepan and saute the onion and peppers for 10 minutes. Add the garlic and cook for 1-2 minutes.
  2. Add corn and greens. Then add tomatoes.
  3. Add all spices
  4. Cook for at least an hour to let every mix.
