Vegetarian Chili
Modified veggie chili recipe from “The Complete Vegetarian Cuisine”.

Ingredients
- 1 tbsp olive oil
- 1 onion peeled and chopped
- 1 red pepper deseeded and chopped
- 2 garlic cloves crushed
- 1 26 oz can tomatoes
- 2 15 oz cans Kidney beans
- 1 15 oz can black beans
- 1⁄2 cup frozen corn kernels
- 1 bunch dark greens (kale) optional
- 1 tsp mild paprika
- 1 tbsp Chili Powder
- 2 tsp cumin
- 2 tsp basil
- 1 cinnamon stick
- salt and pepper to taste
Directions
- Heat oil in large saucepan and saute the onion and peppers for 10 minutes. Add the garlic and cook for 1-2 minutes.
- Add corn and greens. Then add tomatoes.
- Add all spices
- Cook for at least an hour to let every mix.
